Cilantro Lime Rice

Ingredients (4 servings)

  • 1 tablespoon butter
  • 1 1/3 cups basmati rice or long-grained rice
  • 2 cups water
  • pinch of salt
  • 1 lime, juiced
  • handful of cilantro, chopped

  • In a saucepan, heat the butter until melted.
  • Add the rice to the pan, and fry rice until all the grains become transparent.
  • Add water and salt, then bring to a boil.
  • When the water starts boiling, immediately cover turn the heat down to a simmer. 
  • Let the rice simmer for 20 minutes.
  • After 20 minutes, turn off the heat, but keep the cover on. DO NOT REMOVE THE COVER.
  • Let the rice sit on the stove, heat off, for about 15 to 20 minutes before removing the cover.
  • Remove the cover, add the juice of 1 lime, and all the cilantro.
  • Mix until cilantro is evenly distributed.
  • Serve.
