Lemon Pound Cake

I had one lonely lemon sitting around in my kitchen, and was just thinking of things to do with it. In the end, I decided to make a lemon pound cake because I haven't baked in a while, and lemon cake just seems so delicious right now, especially when it is made from a real lemon, not just lemon juice. Also, pound cake is the best. I remember loving Sara Lee as a kid (and even through college), but my tastebuds have seen better since then. 

Ingredients for Cake
  • 1 1/2 cups flour
  • 2 eggs
  • 1/4 cup butter (this is a reduced butter recipe)
  • 1/4 cup apple sauce
  • 1/3 cup sugar  (this is a reduced sugar recipe)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • peel of 1/2 lemon, minced
  • juice of 1 lemon
  • 1/2 cup milk
[optional] Ingredients for Topping/Icing
  • 1/4 cup lemon juice
  • 1/4 cup sugar

  • Add all the ingredients in a mixing bowl, and mix.
  • Pour the mixture into a loaf pan and bake at 350F for 50-60 minutes.
  • Mix the lemon juice and sugar for the topping.

  • When the cake is done, poke holes on the top of the cake with a toothpick and pour the topping/icing mixture over the cake.
  • Serve.
